Tenderize function
No- waste kitchens. Tenderize any protein naturally under vacuum. Tenderizing is a standard function on the Henkelman CombiVac. It is used to keep the vacuum chamber under a certain level of vacuum for a period of time. The vacuum breaks down the cell structure and creates a more tender product.
